Recipe Title Tom's Swiss Chard and Pasta

Describe your recipe. For example: This is a quick and simple cookie dough that you can easily freeze for later use. Makes great holiday cookies. This recipes make around 24 medium sized cookies. Warning: Eat too many and you may become obese.

This is a creamy but healthy pasta dish that can be used as a side or main dish, serving about four people. It suggests the use of a large, well-seasoned cast iron fry pan which heats evenly and adds a liitle iron to everything cooked in it. Don't wash the frying pan when done, use it next morning to fry your eggs in a little olive oil. Never use soap on your cast iron fry pan. I am no cook, but my wife, who is an excellent cook, and who likes subtler flavors than I, actually liked it!

Ingredients

4 lbs whole wheat vermicelli, or your choice of pasta

at least 4 cloves garlic, finely chopped

Chesman, A. 2005. The Garden-Fresh Vegetable Cookbook. North Adams, MA, Storey.
Last summer I was gifted this cookbook by my partner who wanted me to cook for her. It is organzied to follow the harvest season and it helped me to more fully appreciate the CSA. It was written by an author who describes herself as a "cook who gardens". It is available through interlibrary loan in the Minuteman system.
------------------------
Pollan, Michael The Omnivore's Dilemma
This book blew me away. Pollan traces the history of 4 meals, backwards from food on the table through the food chain, contrasting a fast food meal, a meal cooked from ingredients purchased at Whole Foods, a meal made from locally obtained sustainably farmed food, and a meal from foods hunters and/or gathered. This book transformed the way I think about food and its relationship to the natural world and to agribusiness. A must read. ~ Lisa Cohen
