Fiesta Crunch Salad

serves 4

 

Ingredients: 

5 sliced radishes

10 halved cherry tomatoes

2 carrots, sliced thin

one ear of cooked corn, sliced off the cob

arugula greens

some chunks of romaine hearts

 

Instructions:

Mix and toss with a tangy vinaigrette (I use equal parts olive oil & vinegar, with lots of chopped garlic, and salt & pepper).

 

Serve with cubed feta cheese, if desired.
